Vamos postar aqui as diferentes receitas de cada fazenda e até mesmo nossas para que possam sentir um pouco do sabor da nossa viagem!

Mãos a massa!





Calda de cacau (vegana) Receita do Gourmet da terra  
200 ml de leite de coco
160g de Açúcar mascavo 
 40g de cacau em pó

1 col de chá de baunilha
1 col de sobremesa de óleo de coco
Preparo:
Misturar bem todos os ingredientes numa panela antes de levar ao fogo  e depois em fogo médio mexer até engrossar






 
Suco refrescante
2 colheres de sopa de suco de caju
1 copo de folhas de pitangueira
1 litro de água
Bater tudo no liquidificador e coar. Adoçar a gosto.






Pão de milho (Receita Ka)
850g de farinha
150g de fubá
150g de açúcar
50g de manteiga
30g de fermento fresco ou 20g de fermento seco
10g de sal
450 a 500 ml de água
·         Se quiser mais salgado colocar 20g de sal e 80 gr de açúcar
Preparo:
A massa deve ficar bem homogênea e grudar pouco na mão. O segredo é sovar bem (10 a 15 minutos apenas sovando). Esperar crescer (dobrar de tamanho em local quente e protegido)  Assar em forno pré aquecido a 180 graus de 20 a 35 minutos até  dourar e fazer barulho de oco quando bater. Importante deixar o pão respirar em uma grelha. 


Granola
1 kg de aveia em flocos
300g de castanha de caju
300g de noz pecan
100g de castanha do pará
300g de uva passa
280g de coco seco ralado grosso ( preferencialmente do fresco)
150 ml de óleo de girassol
180g de açúcar demerara
120 ml de água
1 pitada de cardamomo ( 3g)
1 pitada de sal do himalaya
Preparo:
Misturar aveia, o açúcar, o óleo, a água e o cardamomo  e dispor tudo em duas ou três assadeiras ( depende de seus recursos e tamanho de forno) O ideal e que fiquem o mais espalhadas possíveis para poder torrar melhor. Levar ao forno à 180 C por 30 minutos, mexendo e virando de 10 em 10 minutos. ( elas devem ficar bem douradas e crocantes. Ralar o coco seco no ralo grosso ou em lâminas e torrar em forno ou panela para dourar. Tomar muito cuidado para não queimar. Se fizer em forno melhor usar um pouco mais baixo 150 C por mais ou menos 20 minutos mexendo de 7 em 7. Amassar com a faca a castanha do pará e picar bem miudinho. Cortar a noz pecan na vertical, as castanhas de caju vão em pedaços maiores só dar uma amassada. Misturar as castanhas picadas, às aveias torradas e o coco seco torrado, levar ao forno por mais 5 minutos e por último acrescentar as uvas passas , deixar assar mais 5 minutos, ou até dourar.
Deixar esfriar e armazenar preferencialmente em vidro, em local ambiente.


Rocher de Coco
450g de coco ralado fino
375g de açúcar
70g de farinha
1 colher de sobremesa de fermento em pó
250 ml de leite
5 ovos
1 colher de café de essência de baunilha
Preparo:
Esquentar o leite sem deixar ferver. Em um bowl misturar o coco ralado a farinha, o açúcar e o fermento. Adicionar o leite quente, misturar. Adicionar os ovos batidos com extrato de baunilha. Pré aquecer o forno 160 C Em uma assadeira untada ou com papel manteiga  dispor os rochers. Assar por 15 minutos até que eles começem a dourar.
** depois de assados podem ser passados em chocolate banho maria para ficarem chocolate e coco.



Biscoitos de gengibre
180g de manteiga ( em temperatura ambiente)
200g de açúcar
1 pitada de sal
4 colheres de sopa de maple sirup ou xarope de agave
1 ovo
280g de farinha
2 colheres de café de bicarbonato de sódio
2 colheres de café de gengibre em pó ou 1 de sobremesa de gengibre fresco ralado
Para enrolar
100g de açúcar demerara
Preparo:
Em um bowl trabalhar a manteiga, adicionar o açúcar , a pitada de sal e o maple sirup. Incorporar o ovo com fuet e mexer. Juntar o gengibre a farinha e o bicarbonato. Não trabalhar muito a massa, suficiente para ficar homogênea. Melhor trabalhar com a mão essa última etapa.
Pré aquecer o forno a 180 C untar duas formas ou colocar papel manteiga.
Despejar o açúcar demerara num prato de sopa e com ajuda de colheres fazer bolinhas e passar no açúcar demerara e colocar na forma com espaço grande entre os biscoitos.
Assar até dourarem. De 12 a 15 minutos. Retirar da forma enquanto ainda estiverem quentes, eles ficam crocantes quando esfriam, deixar respirar em grelhas .


Bolo Brigadeiro da Rose ( o Bolo de muitos aniversários lá em casa)
3 ovos
2 xic de farinha
1 xic de chocolate
½ xicara de açúcar
¾ de xicara de óleo
½ xicara de água morna ou leite
1 colher de sopa de fermento
1 pitada de sal
Preparo:
Pré aquecer o forno a 180 C .Bater os ingredientes na batedeira, até ficar massa bem homogênea. Untar a forma e assar por 15 a 20 minutos até o garfo sair limpo.
Calda de Chocolate e topping de granulado





Pão de queijo
200g de polvilho
200g de queijo ralado
40g de gordura ( Manteiga ou óleo)
100ml leite
1 ovo
Sal ( depende do tipo de queijo normalmente 1 colher de chá cheia)
Preparo
Aquecer o leite e o óleo , adicionar ao polvilho, adicionar o queijo o sal e por último o ovo Misturar tudo e fazer as bolinhas Assar em forno pré-aquecido 180 C de 15 minutos. Ou congelar . Depois de congelados assam de 20 a  30 minutos.

Receita do Bolo Integral da Tia Lourdes

Uma Maravilha! Um dos melhores bolos integrais que já comi... Se não contar ninguém diz que tem abobrinha!




Ingredientes:

2 xícaras de açúcar mascavo
3 ovos
1/2 xícara  de manteiga
1 colher de chá de essência de baunilha
1 xícara de abobrinha  ralada
1 xícara de maçã ralada
1 colher de chá de bicarbonato de sódio
2 xícaras de farinha Pode ser 1 de cada farinha)
2 colheres de chá de canela

2 colheres de sopa de nozes mal esmagadas
uma pitada de sal
Preparo:
      Misturar todos os ingredientes em um bowl. Assar em tabuleiro untado e polvilhado de farinha em ± 40 minutos. Forno 180. 




Scones ( Frank's vegan recipe)


Ingredients450g of self raising flour

65 g of sugar
125g fat ( marg or coconut  oil)
1 table spoon of salt
3/4 cup of raisins
190 ml of líquid ( half Water, half veg milk)


Mix all the dry ingredients in a bowl, then add the liquidis til gift a solid soft misture ( still little sticky)let it repouse for 10 minutes. Put the flour in a surfice and make a sort of a retangule 2 cm tall and cut then with a ring.


Put some marge in the baking tray and bake them 180 for 20 minutes. Serve them hot with marge and jam.
You can add for taste marzipan, orange zests, lemon zestes, blueberries.

Bolo de maçã massa consistente ( Mais uma da Tia Lourdes) 

3 ovos
3 colheres de sopa de manteiga
2 Xic chá de Farinha branca
2 Xic de chá de Açúcar rasas
1 xic de café de leite
1 col. de chá de fermento
3 maçãs
Canela para polvilhar

Bater na batedeira untar a forma e com papel vegetal colocar tudo na forma polvilhar com canela e cobrir com lâminas de
Maçã!

Assar por 40 minutos cobrir com uma compota ou geléia





Vegan and easy Pancakes ( Frank's Recipe) 



1 cup of self raising flour
1 table spoon of sugar
1 pinch of salt
3/4 cups of liquid ( half water and half vegetable milk)

Mix all the ingredients very fast till everything comes toguether. Then stop. Set the fry pan with some small amount of oil, let it heat and put the dough, bake in slow fire the two sides, Turn when the upper part still smooth.

* You can add fruit slices, spices, and chocolate drops in the dough




Elder flower champanhe (Emma's Recipe)

For 20L ( 5 gallons)

35 heads of Elder flower ( sambucus nigra)
10 lemons
2,9kg of suggar
10 tablespoon of white wine vinnegar









Boil 2 litres of Water and put in a fermentation barrel, 



add the sugar and mix till dissolve. Add more 18 litres of cold Water. Remove most of the green stokes of the flowers,








                                                         cut the lemons in thin slices


add to the barrel, add the withe wine vinnegar and mix well

 Close the barrel and wait 24 hours to ferment. Drain and tranfer to a proper fermentation barrel or very solid bottels.

Its a delicious summer drink very refreshing and no alcaholic!
* you should pic the Elder flowers in sunny days and when they are fully open.


Jam and cream crazy cake (Frank's recipe)

 This really is a breakthrough, amazing cake, make it in a minute,  Simple method and recipe. Mix dry ingredients to wet ingredients,.... bake.




Ingredients
1 1/2 Cups flour (all-purpose)
1 Cup sugar (All purpose sugar -
Granulated Pure Cane Sugar)
1 tsp. baking soda,
(or 1.5 tsp. baking powder)
1/2 tsp. salt
.............
1 tsp. vinegar
1 tsp. pure vanilla extract
5 Tbsp. vegetable oil
1 Cup water
1 vegan  pastry package
1/2 cup of your favorite jam

Method:

Preheat oven to 350 degrees F.
180.

 First mix 5 dry ingredients,  add the wet ingredients until smooth. Don't over mix.
 Open the pastry till it comes to a thin even layer, Put baking paper on a medium tray, spread the jam on the pastry and add the dough.
Bake on middle rack of oven for 35 minutes. Check with a fork to make sure it comes out clean. Cool. Top with your favorite frosting. Enjoy!

Note: Oven baking times may vary, be sure to check your cake to make sure you do not over bake.




Chocolate Vegan Cake.( Frank's recipe )
 Ingredients
1 1/2 Cups flour (all-purpose)
3 Tbsp. cocoa (unsweetened)
1 Cup sugar (All purpose sugar -
Granulated Pure Cane Sugar)
1 tsp. baking soda
(or 1.5 tsp. baking powder)
1/2 tsp. salt
...........

1 tsp. vinegar
1 tsp. pure vanilla extract
5 Tbsp. vegetable oil
1 Cup water

Directions:

Preheat oven to 350 degrees F. 180
First mix 5 dry ingredients in a greased 8" square baking pan. Mix wet ingrediants until smooth. Don't over mix.

Bake on middle rack of oven for 35 minutes. Check with fork to make sure it comes out clean. Cool. Top with your favorite frosting. Enjoy!

Fruit Cake.  Frank's Vegan Cake
NO FAT!
Ingredients
2 green tea bag
2 Cups of water
1 cup of self raising flour ( if you don't have it add 1 tb sp of baking powder)
1/2 Cup sugar (All purpose sugar -
2 tb spoon of Molasses
1 coffee spoon of cinnamon
1 coffee spoon of nutmake
1/2 cup of raisins
1/2 cup of walnuts
1/2 tsp. salt
Method:
Boil the 2 cups of water and make the green tea. (stir it) put in a pan or bowl (while the tea is hot) dissolve the molasses, and add the sugar, cinamon, nutmake, raisins and the walnut. Mix the flour until the cake dough is wet (thicker than pancakes).
put some oil in a bread tin, add the dough and cover with some aluminium paper , and bake in a  preheated  oven in 160.for 1 hour.


  
Frank'sEasy Bread 
ingredients
1 cup of self raising flour
1 pinch of salt
1 tea sp of dry yeast
water

Method
Mix all the ingredients until it becomes a nice, non sticky dough. Let it grow for 1 hour in a warm dry place. Divide the dough into same size balls, and  roll them until they are the shape and size you need, Let them rest covered for half an hour, Bake in a saucepan for 5 to 10 minutes until each side is light brown.


Vegan Omelette
Ingredients
1 Potato
1/2 onion
1 small clove of garlic
1 cup Garam flour
water
oil
salt
Method:


Fry some tasty food (chopped potato, onions and garlic,) until soft. Mix garam flour with a small amount of water until  a dough, mix with the stir fried food and fry in a saucepan as an omelette. 




Nettle Pesto
6 bunches of  new leaves of stinging nettle Urtica Dioica
1 clove of garlic
1 pinch of salt
1 desert spoon of dry east
2 desert spoon of nut ( walnut, sunflower seed)
olive oil


300g of penne

With gloves, pick some stinging nettle, pick the leaves and chop finely. chop the garlic and the nuts, mix all the ingredients. Cook the pasta, and add the sauce.

Mung Beans Pancake
1 cup of dry mung beans
2/4 of water
1/2 onion
one pinch of salt

Soak the mung beans for 5 hour in water ( you can put hot water to get it faster)  They should be soft ( you have to be able to smash them with you fingers) drain the water and put in a mixer cup fill with the water ( don't let it cross the beans level) add half onion and salt, blend it all till gets a soft dough.
pre heat an iron pan, with the other half onion spread oil to the pan. with a ladle put the dough in the pan and spread it with the bottom of the ladle in round movement put a tap, let it cook for one minute and gently removes it ( don't need to turn, the upper side is steamed)

Tamarind Chutney
500g of tamarind paste
5 dessert spoons of sugar
1 tea spoon of dry red pepper ( capsicum baccatum)
1 pinch of salt

Soak the tamarind in hot water ( not so much, just to let  it soft)  for 1 hour, Stir it to remove the seeds and gets a paste, put the paste and the other ingredients in a pan and let it reduce till gets the chutney consistency

Brazilian Beans
300g red beans
2 cloves of garlic chopped
1 onion
2 bay leaves
1 tea spoon of oil
2 tomatoes
1 tea spoon of coriander
1 liter of veg stock or water

Soak the beans overnight in water. Throw the water. In a pressure pan cook the beans  with the bay leafs for half our  In a pan fry the garlic, onion till  they get soft and light brown, add the chopped tomatoes, cook well till it gets a nice past, add the cooked beans, let it boil for 10 minutes, add salt and the coriander

Feijoada ( Brazilian tipical dishe)

250g Black Beans
120g of pumpking
25 g of Beetroot
100g of carrot
4 cloves of garlic
4 bay leaves 
1 spoon of olive oil
1 pinch of cummin powder
1 pinch of black pepper
120 g of smoked tofu or veg cheese
1 litre of veg stock or water
1 pinch of salt
1 tea spoon of parsley

Soak the beans overnight in water. Throw the water. In a pressure pan cook the beans  with the bay leafs for half our. Cut all the veggies and the tofu in small squares (beans size) In a pan fry the garlic, onion till  they get soft and light brown, add the veggies squares, and the spices , add the cooked beans, let it boil till the veggies are soft, add salt, the smoked tofu and the parsley. Serve with rice,  stir fry kale, farofa  and orange

Farofa
150g Corn Flour ( for polenta)
1 onion
1 carrot
6 olives
1 banana
Chives
pinch of salt
olive oil

In a fry pan roast the corn flour, add little bit of water and mix till it cooks  but don't lose the grain form. let it apart.  Chop the onion, the  olives , slice the banana and great the carrot.
In a pan  heat the oil, fry the onion, the carrots and the olives, mix well when is everything nicely cooked add the banana sliced cook little more, add the corn flour cooked and mix all together, add salt and chopped chives.

Burger  ( Just important keep the proportion, but it is a lovely way of using food waste, so you can add anything and correct the dough adding more water or drying add some oat)
1 x of beans  Cooked
2x of rice (cooked)
3 table spoon of farofa
1 tea spoon of marmite
oil

Grind all the ingredients until they get a dough that can be molded put oil in the hands Make the burgers, in a oiled  tray  sets the burgers Bake in 180 C for 40 minutes ( after 20 minutes turn the burgers and add some oil to they get crunchy)
( you can stuff the burgers with veggie cheese)
You can serve with bread, i used to serve on chard leaves and make a tomato or garlic  vegan  mayonnaise
Hot Lemon Ginger
2 inches of ginger
1 tbspoon of Golden Syrup
1 lemon
2 cups of water

Cut the ginger in small little pieces and let it boil with the water till reduces
In a cup squizz half lemon and add the golden syrup, add the hot tea and mix well. Very good to heat and for respiratory problems

Nut Loaf  Recipe from Gwen and Dave, a lovely cuple that made a delicious dinner for us

Have ready1/2 cup raw brown rice, cooked
Combine2 cups chopped onions, sauteed (2 large)
1 cup walnuts, coarsely ground (can use blender)   
1 cup cheese, grated (125g)
2 Tbsp lemon juice
2 eggs, beaten
2 Tablesp nutritional yeast + 1/4 teasp salt ( I use a dessert spoon Marmite, no salt)
1 teasp caraway seeds
Cooked rice

Mix well. Place in oiled loaf tin.

Bake 180 for 40 min (or longer) till firm





Molhinho de gergelim
Ingredientes
100 ml de azeite
35g de açúcar demerara orgânico
45g de gergelim
40ml de suco de limão
1 pitada de sal
Modo de preparo, derreter o açúcar numa panela, adicionar o gergelim, deixar dourar. desligar o fogo adicionar o azeite, limão e sal e misturar bem. Guardar refrigerado. Dura 1 semana.




Brigadeiro de Cardamomo
1 lata de leite condensado
raspas de um limão
2 colheres de chá de cardamomo em pó
1 colher de sopa de manteiga com sal
Para embalar a bolinha: farinha láctea, coco seco, amêndoas em pó ou lascas  ou chocolate branco.
Preparo 
Aquecer a manteiga e dourar o cardamomo em pó até liberar o aroma, acrescentar o leite condensado e mexer sem parar em fogo baixo. Depois que borbulhar e começar a dar ponto adicionar um pouco de água umas 3 colheres de sopa na lata de leite condensado, mexer bem até virara um leitinho e adicionar no brigadeiro, mexer bem em fogo baixo até  chegar no ponto desejado, quanto mais mexer mais puxa o brigadeiro fica, quando ele desgruda das laterais da panela está no ponto de recheio ou brigadeiro de colher.quando mais tempo mexer mais puxa e toffee ele vai ficar. Quando estiver quase no ponto desejado. adicionar as raspas de limão.
Outra dica para não açucarar e que pode salvar as festinhas de aniversário, vc pode fazer as bolinhas e congelá-las. no dia da festa, retire com 2 horas de antecedência, passe no granulado que quiser e sirva, ficam maravilhosos!

Macarrão da tia Lourdes ( mais uma receita dela! Tia sempre comemos suas delicias e lembramos muito de você!)
120 g de spaguetti
1 maçã grande
1 pacotinho de cogumelos frescos (250g)
2 dentes de alho
1/3 de lata de natas
sal a gosto
pimenta do reino
1 colher de azeite

Modo de preparo                         
Essa é uma receita bem rápida e fica divina. Enquanto a água do macarrão esquenta, vc corta o alho( bem pequenino) corta os cogumelos em quatro, e descasca as maçãs e corta em meia luas e depois na metade ( o ideal é que fiquem no mesmo tamanho dos cogumelos )
Enquanto o macarrão cozinha vc refoga no azeite o alho, depois os cogumelos e rapidamente salteia as maçãs. adiciona as natas ( ou creme de leite) e depois joga no macarrão  já escorrido, o ideal é deixar um pouco da água do cozimento para dar cremosidade e não deixar as natas secarem.


Temperar com sal e pimenta e servir com queijo da ilha ralado.
